This is the 2nd year that 3 Squares CafÃ© participated in the Stowe Wine and Food Classic (see last year’s here.) And yet again, Chef Matt Birong has my tastebuds singing from the top of the hills. Pair great wine, great food and great views with great weather and you have a very, VERY happy Jamie.
This year 3 Squares served up a braised short rib nacho with black beans, pico de gallo, and an avocado creme, which was my favorite part of the whole dish, as I’m rather obsessed with guacamole these days. They also made a cumin-crusted scallop made with jicama mango slaw, guajillo chipotle salsa, and a cilantro pesto which was oh-so fresh and summery. My only complaint is that they weren’t complete meals, but that is because it is a TASTING event. Guess I’ll just have to go visit Vergennes to eat more of 3 Squares CafÃ©’s yumminess.
